Mason is up at the crack of dawn, for it’s a snow day! We have about 10 inches on the ground and it’s still falling down. So what do we do? Snow cream for breakfast! That’s right, I get mom of the year for feeding my type one diabetic snow cream for breakfast. At least we live in the south, and don’t get snow very often. Mason will only be a child once and needs to live a little. We upped his insulin intake, and collected some fresh snow.15871669_10154952593573760_3374454749396182050_n

The recipe we used: Snow Ice Cream

  • 4 cups Snow
  • 1 cup Evaporated milk
  • ¼ cup Sugar
  • 1 tsp. Vanilla

I found some really cool recipes online, cake batter snow cream, yum! But sadly we don’t have a box of yellow cake mix. You have to add 1 ½ table spoon to the above recipe. I’d like to try that! Mason came up with a Diet Coke slushy. (add snow to a cup of Diet Coke) It’s amazing what a little chef can create when told he can’t eat snow cream all day. He has another idea to try, snow cream sandwiches. We will have to save some snow cream in the freezer until I can get to the store to get graham crackers. He’s planning to sandwich the snow cream between the graham crackers, so I’ll let y’all know how that goes later.

I envisioned a fun day of playing in the snow. You know like in the movies, everyone having a big snow ball fight, sledding, and making snow angels together. But after only 12.5 minutes, I think we were on the verge of losing some toes to frost bite. We do not have the gear to live or play in this snowy weather. Is it Spring time yet?

Due to a chicken failure a few months ago, we don’t have any livestock to tend to today, because a fox (we think) got to them. It’s not garden season, so for the rest of this snow day, we can be found curled up on the couch under a big fluffy blanket trying to stay warm. I also must say, we stayed at my mom’s house last night, because the last snow storm we had we couldn’t get our vehicles off of the property for 2 weeks! It will at least be a good time to get ahead in our Read The Bible in a Year for Kids, because I know we will never be on top of it enough to stay up to date. Hopefully, we will warm up enough to go out and shovel the deck and walk if this snow will ever stop falling.
